I know some people who didn't take the first date, but they told them when initially offered. I took the first date, it was 3 days after my interview. My employer wasn't happy, and I didn't want to leave them like that, but they also were on a steep downslope and went out of business shortly after I left (coudn't run it without me  ). If you already accepted a date I would be reluctant to change it, though I don't think it would get you fired. You could probably call training scheduling and just ask how big of an issue it would be.
PS
Just so you don't think I just bailed without a second thought, I actually put a lot of thought into it and was asked at my interview what the impact would be. At the time we had way too many pilots at my company and I had already had some conversations with the CP there. I was trying to leverage for a different position and was told "If you think someone will put you in a turbine with your time, go there" (I had 1300/600 with 350 in large piston aircraft over 20,000lbs and everyone was hiring in 2000).
